- Miso is one of Japan’s traditional fermented foods. Our miso is hand-crafted in sunny Nelson and uses quality ingredients: soy beans from Motueka, natural sea salt from Blenheim, Koji (a type of culture for making sake), and rice.
Our miso is then fermented for more than 6 months and unpasteurised. Most commercial miso paste is not fermented for long and also pasteurised which means no beneficial micro organism are existing in these miso pastes. Miso is full of nutrients, beneficial enzymes, amino acids, minerals and bacteria necessary for good health.
